Recipe: Gluten Free Spiced Chocolate Snowball Cookies

Holiday cookies hold a special place in our family, much like in many others. With a gluten-free outlier in our midst, baking can be challenging, but over the years, we’ve perfected recipes, and you can hardly discern the difference.

This year, we baked these delightful gluten free spiced chocolate snowball cookies in our showroom for our annual staff outing. Cookies are meant to be shared, and the joy on people’s faces as they sneakily stash cookies in their pockets is priceless.

Here is one recipe we swear by to fool even the staunchest gluten-free deniers.

 

Ingredients:

 

Dry:

2 ½ cups gluten free all-purpose flour

1/3 cup cocoa powder

2 tsp baking powder

½ tsp baking soda

¾ cup sugar

Pinch of salt

Powdered sugar

1 orange zest

½ tsp ground cloves

½ tsp ground nutmeg

½ tsp ground cinnamon

 

Wet:

2 eggs

½ cup milk

1/3 cup vegetable oil

1 tsp vanilla extract

 

Instructions:

1.    In a medium mixing bowl, put flour, cocoa, baking powder, and baking soda.

2.    Sift the mixture into a separate bowl then add and mix spices.

3.    Fit stand mixer with whisk attachment and add two eggs to a separate bowl, whisking until frothy (3-4 minutes)

4.    Slowly add sugar and continue to mix until well combined and slightly thickened.

5.    Add the milk, oil, vanilla, and zest and combine well.

6.    Remove bowl from the mixer and combine wet and dry ingredients with a wooden spoon until full combined. The dough should be soft but hold its structure.

7.    Refrigerate for at least 30 minutes.

8.    Preheat oven to 350 degrees with rack in the middle.

9.    Line baking sheet with parchment paper and scoop the dough, and form into smooth balls the size of a golf ball.

10. Roll each ball in the powdered sugar until covered.

11. Place cookies on cookie sheet roughly 2 inches apart

12. Bake for 8-10 minutes or until firm to the touch.

13. Let cool and enjoy!
